School holidays were incomplete without the customary strolls in the kitchen, watching Ma and Naani hunched over the slap, chopping the most ripe vegetables, pounding the most aromatic spices, and adding them all into one massive concoction, that you later enjoyed as pickles with lunch and dinner.
Homemade achaar had a distinctive taste, that was so one-of-a-kind that we still try looking for the same unique flavour in our meals today, decades since we first had a lick of it. But we haven’t had much luck in identifying the same pickles as the days of our childhood. In cities far from home, people don’t even know what they are missing out on. Decades have passed, but the memory of it still remains.
Keeping that memory ignited in our minds, we set out on our mission to experience once again, the pure joy of having My Mausi’s Ambaar, and vowed to spread the love with every single person who craved the smell and taste of home on lonely nights. Thanks to the skilled chefs at MOLO, pacifying your nostalgia is now just one tap away.
Have you ever wondered why it was so difficult finding the same jars of pickles today, despite how small the world has become given the rapid modernisation? It is the ingredients. Homegrown and handpicked ingredients offer a totally separate flavour profile than regular ones found in the market today. Keeping that in mind, at MOLO, we have made conscious efforts to carefully curate each component so that they are naturally able to balance each other out. The sweetness of Ambaar along with some of the finest spices, turmeric, chillies, and Bishop’s Weed, makes this diverse blend delicious, refreshing, and healthy too.

How is Ambaar Pickle made?
An indigenous and fresh assortment of ingredients are used to accurately replicate our heirloom recipes. If there is one thing that we never compromise on, it is the quality of all the elements used in creating this sweet-spicy-tangy goodness. Here are a list of the ingredients used:
Ambaar
A rare fruit, usually eaten raw along with salts and chillies for its health benefits. It adds the individual, eccentric flavour to the pickle, that makes it so sought after. Ambaar is rich in Vitamin C, thereby boosting immunity, and is also a good source of dietary fiber which facilitates digestion and prevents constipation. Since it is also a natural source of Vitamin A, many doctors suggest including Ambaar in our diets for better vision and eye health
Turmeric
We are all familiar with haldi and haldi ka doodh, especially when we used to return home with injuries and wounds scattered all over our body. There was a reason behind why our mothers and grandmothers forced us to consume turmeric during these times – since it possesses bioactive compounds it helps in fighting against the after-effects of oxidation. Not only that, studies have also suggested that since turmeric is packed with antioxidants, it slows down the occurrences of age-related diseases such as cancer and Alzheimer’s. Lastly, because of its anti-inflammatory nature, adding turmeric to your diet will also promote good digestive health
Red Chilli
Red chillies make even the blandest of foods a little more interesting! However, chillies have a host of health benefits too apart from elevating the flavours in our food. Firstly, they promote cardiovascular health by preventing formation of blood clots that lead to other heart-related problems. Since they accelerate fat burning and reduce appetite, they are extremely beneficial to include in your diet if you wish to lose some weight. Chilies are also loaded with Vitamin C, which helps in strengthening your immunity naturally
Mustard Oil
This oil is almost always found in our kitchens and used as a cooking oil. In fact, mustard oil is a much better alternative to the other oils available in the market today. Not only does it improve digestive and heart health, it is also known to slow down the growth of some cancer cells. An added benefit of mustard oil is that it is antimicrobial in nature – which means that it is a natural preservative, ensuring a long shelf life for your pickles

Bishop’s Weed (Ajwain)
More commonly known as Ajwain, this little element offers numerous advantages. There are certain enzymes present in Bishop’s Weed that allow flow of stomach acids helpful in curing bloating, indigestion and gas. This ingredient is also known to cure coughs and colds – it clears the mucus and widens the bronchial tubes, which helps you breathe better.
Fenugreek (Methi)
It is one of the richest sources of iron and magnesium. This ingredient is highly recommended to those who suffer from anaemia and other iron-related ailments. Fenugreek also offer various other health benefits: it improves stamina, boosts digestive health, and helps in managing diabetes
