Lehsuni Vada Pav

Want to make this delicious snack at home? Here's a special recipe from our in-house chef. 

Ingredients:

(For 6 vada pavs) 

  1. Mumbai Pavs
  2. Potatoes - 350 grams
  3. Oil for frying
  4. Roasted peanuts - 20 grams
  5. Curry leaves (7-8)
  6. Mustard seeds- 1/2 tsp
  7. Coriander leaves- 1 tbsp
  8. MOLO Garlic pickle - 2 tsp (Drain the extra oil from pickle)
  9. Salt 
  10. Turmeric powder - a couple of pinches
  11. Asafetida (hing)- a pinch
  12. Water- 1/2 cup
  13. Besan - 1 cup
  14. Green chutney - as required
  15. Tamarind sweet chutney - as required
  16. Baking soda - a pinch ( optional)

 

Method of Preparation: 

Making the Potato Stuffing


Step 1

  • Boil 2 large potatoes about 350 grams
  • Peel & mash with a fork in a bowl

Step 2

  • Heat 1 tsp of oil in a pan then add 1/2 a tsp of mustard seeds and let them crackle
  • Then add 7-8 curry leaves. Stir and sauté for about 5 seconds

Step 3

  • Now add 2 TSP of MOLO Garlic Pickle (Lahsun ka achaar)
  • Add 20 grams of roasted peanuts and stir well
  • Pour this mixture together with the oil into the mashed potatoes
  • Add 1 tsp of chopped coriander leaves and salt as required

Step 4

  • Mix everything well
  • Then make a small to medium balls from the mashed potato mixture
  • Flatten these balls a bit. Cover and keep it aside

Making the Batter

  • In another bowl, make a smooth batter from 1 cup besan (gram flour), 2 pinches of turmeric powder, a pinch of asafetida, a pinch of baking soda (optional)
  • Now add salt and half cup of water (or as needed).
  • The batter should have a flowing consistency, it should not be too thick or thin

Bringing it Together

  • Heat oil in a pan/wok/kadhai
  • When the oil is hot, dip the slightly flattened potato balls in the batter and coat it evenly with the batter
  • Gently drop these batter coated potato balls in medium heated oil 
  • When one side becomes slightly crisp and golden, then turn over gently
  • Deep fry them until golden, turning a couple of times needed
  • Take the fried balls out, drain them on a kitchen paper towel
  • Slice the pav without breaking it into 2 parts and set aside
  • Spread both green & sweet chutneys on the sliced pav. You can also spread green chutney on one side and sweet chutney on other side
  • Place the potato balls into the pavs

You can also spread a little bit of the MOLO Green Chilli Pickle along with chutneys. 

Serve hot, enjoy with kadak chai
